Ingredients
- 600ml/1 pint red wine
- 2 or 4 medium shallots or onion, sliced (optional)
- 30g packet instant dried wine gravy mix, eg. Bonne Cuisine
Method
- Boil the wine in a pan with the shallots or onion, if using, until it is reduced by three-quarters.
- Cook the gravy according to the instructions on the packet, but use one and a half or even double the amount of water suggested (this trick always seems to improve the consistency of packet sauces).
- Add the reduced wine to the gravy, push through a sieve and serve.
Notes
The flavour of the wine combined with the shallots or onion gives the sauce a real lift.
