Ingredients
- 800g (1lb 2oz) parsnips, peeled and sliced
- 200ml creme fraiche
- 50g (2oz) Parmesan cheese, freshly grated
- nutmeg, freshly grated
- salt
- freshly ground black pepper
Method
- Preheat the oven to Gas Mark 3 / 170°C. Butter a shallow gratin dish.
- Cover the parsnips with cold, salted water and bring them to the boil. Simmer for five minutes until they are just tender.
- Drain and then arrange the slices in the prepared dish. Season the parsnips with the nutmeg, salt and pepper and spread the creme fraiche over them.
- Sprinkle the grated Parmesan on top and then bake in the oven for 30 minutes, until the topping is crisp and golden.
Notes
Can be prepared in advance. Freezing not recommended. Tip: To make it easier to spread the creme fraiche evenly over the parsnips, warm it a little — this is easily done in the microwave.
