Baked Eggs with Prosciutto & Brie

Ingredients

  •   prosciutto, cubed
  •   button mushrooms, chopped
  • 1-2 spring onions, chopped
  •   butter, for greasing dishes
  •   Brie, sliced
  •   eggs

Method

  1. Fry cubed prosciutto and then add chopped button mushrooms. Add 1–2 chopped spring onions and stir over heat for 1 minute.
  2. Lightly butter 2 small dishes (or cups) and fill about 1/3 depth with the mix.
  3. Slice some Brie and place over the mix.
  4. Break eggs into each dish and put in a 180°C oven for 7–8 mins.
  5. Cover with 2–3 slices of Brie and then back in oven for 5–6 mins.
  6. Sprinkle a little chopped spring onion on top and serve immediately.
