Method
- Fry cubed prosciutto and then add chopped button mushrooms. Add 1–2 chopped spring onions and stir over heat for 1 minute.
- Lightly butter 2 small dishes (or cups) and fill about 1/3 depth with the mix.
- Slice some Brie and place over the mix.
- Break eggs into each dish and put in a 180°C oven for 7–8 mins.
- Cover with 2–3 slices of Brie and then back in oven for 5–6 mins.
- Sprinkle a little chopped spring onion on top and serve immediately.
