Russian Red Cabbage

Ingredients

  • 8oz red cabbage, finely shredded, woody stalk discarded
  •   turnip, scrubbed and grated
  •   oil
  •   red wine vinegar
  •   shoyu or soy sauce
  •   black pepper

Method

  1. Finely shred the red cabbage, discarding the woody stalk.
  2. Scrub the turnip and grate it. Mix with the cabbage.
  3. Heat the oil in a large saucepan and gently fry the vegetables for 2 to 3 minutes.
  4. Add the remaining ingredients and season with shoyu or soy sauce, and black pepper.
  5. Cover and cook gently for 35 to 45 minutes, stirring occasionally, until tender. Serve hot or cold.
