Ingredients
- 85ml/3fl oz vegetable oil
- 50ml/2fl oz olive oil
- 4 onion, sliced
- 2 large potatoes, sliced
- 4 red pepper, skinned, seeded and sliced
- 1 green pepper, skinned, seeded and sliced
- 4 eggs, beaten
Method
- Heat the vegetable and olive oils together in a large frying pan. Add the onion and potatoes and cook gently, making sure that they do not burn. Once cooked, remove from the pan and retain the oil.
- Mix the peppers, potatoes and onion with the beaten eggs and season lightly.
- Place two tablespoons of the oil in a separate pan, add the egg mixture and cook until the underside is brown. Finish by placing the pan under the grill until the omelette is browned.
