Spanish Omelette

Serves 4

Ingredients

  • 85ml/3fl oz vegetable oil
  • 50ml/2fl oz olive oil
  • 4 onion, sliced
  • 2 large potatoes, sliced
  • 4 red pepper, skinned, seeded and sliced
  • 1 green pepper, skinned, seeded and sliced
  • 4 eggs, beaten

Method

  1. Heat the vegetable and olive oils together in a large frying pan. Add the onion and potatoes and cook gently, making sure that they do not burn. Once cooked, remove from the pan and retain the oil.
  2. Mix the peppers, potatoes and onion with the beaten eggs and season lightly.
  3. Place two tablespoons of the oil in a separate pan, add the egg mixture and cook until the underside is brown. Finish by placing the pan under the grill until the omelette is browned.
