Ingredients
- 150g/5oz plain flour
- 100g/4oz icing sugar, plus a little for dusting
- 300ml/½ pint skimmed milk
- 1 tsp vanilla essence
- 400g/14oz can peaches in natural juice, drained
- 1 lemon, grated rind
Notes
The clafouti is a classic French fruit dessert. A cross between a plump pancake and a pudding, it is very easy to prepare and makes a perfect winter dessert served warm. If you prefer, it can be made with canned apricots or a mixture of fresh and canned fruit.
