Pork Chops with Lime Glaze and Stir-Fried Vegetables

Ingredients

  • 6 Safeway frozen pork loin chops, defrosted
  • 2 tsp Safeway sunflower oil
  • 1 small onion, finely sliced
  • 3 carrots, diagonally sliced
  • 1 green cabbage, finely shredded
  • 325g (11oz) can sweetcorn, drained
  •   seasoning
  •   lime slices, to garnish
  • 2 limes, finely grated rind and juice
  • 2 tbsp Safeway dark soy sauce
  • 2 tbsp Safeway clear honey
  • 1 garlic, crushed
  • 1 tsp Safeway ground ginger
  • ¼ tsp freshly ground black pepper

Method

  1. Just before the chops are completely defrosted, trim off the fat with a sharp knife and place on a foil-lined baking tray or roasting tin. Preheat the oven to 200C/400F/Gas 6.
  2. Make the glaze: mix together the lime rind and juice, soy sauce, honey, garlic, ginger and pepper. Pour over the chops and bake for 18-20 minutes until tender, turning and basting occasionally with the glaze.
  3. Meanwhile, heat the oil in a large frying pan and stir fry the onion and carrots for 2 minutes. Add the cabbage and sweetcorn and stir fry for a further 5 minutes; season to taste. Garnish with lime slices and serve with the chops.

Notes
