Ingredients
- 3 oranges, sliced very thinly
- 2 salmon fillets
- salt and pepper
- nutmeg, grated
- ½ bottle red wine
Method
- Slice 2 oranges very thinly and place in a fry pan.
- Place 2 salmon fillets over the orange slices.
- Cover the ends of the fillets with slices from the 3rd orange, squeezing the juice from 1 orange over the fillets.
- Season with salt and pepper.
- Grate nutmeg over the top, then cover with the leftover orange slices and about half a bottle of red wine.
- Bring the pan up to a mild boil, then simmer for 10–15 minutes with foil over.
Notes
Serve with boiled potatoes or salad.
