Salmon with Orange

Serves 2 Cook 15 min

Ingredients

  • 3 oranges, sliced very thinly
  • 2 salmon fillets
  •   salt and pepper
  •   nutmeg, grated
  • ½ bottle red wine

Method

  1. Slice 2 oranges very thinly and place in a fry pan.
  2. Place 2 salmon fillets over the orange slices.
  3. Cover the ends of the fillets with slices from the 3rd orange, squeezing the juice from 1 orange over the fillets.
  4. Season with salt and pepper.
  5. Grate nutmeg over the top, then cover with the leftover orange slices and about half a bottle of red wine.
  6. Bring the pan up to a mild boil, then simmer for 10–15 minutes with foil over.

Notes

Serve with boiled potatoes or salad.
