Ingredients
- onions, sliced
- 2 teaspoons demerara sugar
- splash red wine
- Parma ham or bacon
- lambs liver
- 1 tablespoon orange marmalade
- salt and pepper
Method
- Fry onions (sliced) until cooked and golden in a hot pan.
- Add 2 teaspoons of demerara sugar and a splash of red wine. Cook slowly to reduce.
- Meanwhile, fry Parma ham or bacon. While they crisp up, add the liver.
- Take bacon out of pan to crisp on the plate. Turn the liver.
- Add 1 tablespoon of orange marmalade to the onions over the heat.
- Season liver with salt and pepper. Serve liver with onions, bacon and mash.
