Lambs Liver

Ingredients

  •   onions, sliced
  • 2 teaspoons demerara sugar
  • splash red wine
  •   Parma ham or bacon
  •   lambs liver
  • 1 tablespoon orange marmalade
  •   salt and pepper

Method

  1. Fry onions (sliced) until cooked and golden in a hot pan.
  2. Add 2 teaspoons of demerara sugar and a splash of red wine. Cook slowly to reduce.
  3. Meanwhile, fry Parma ham or bacon. While they crisp up, add the liver.
  4. Take bacon out of pan to crisp on the plate. Turn the liver.
  5. Add 1 tablespoon of orange marmalade to the onions over the heat.
  6. Season liver with salt and pepper. Serve liver with onions, bacon and mash.
