Sponge Sandwich

Ingredients

  • 3 eggs
  • 3 ozs caster sugar
  • 3 ozs self raising flour, sieved
  • ¼ teasp. salt
  •   flavouring, as required

Method

  1. Break the eggs into a mixing bowl and add the sugar, salt and flavouring. Whisk at high speed until the mixture is thick and creamy.
  2. Sieve the flour and baking powder and add gradually to the mixture at slow or medium speed until smoothly mixed.
  3. Turn into greased and floured 7" sponge sandwich tins. Bake 15 to 20 minutes at 400°F (Gas 6).
  4. When cooked, turn out to cool on wire trays. When cold, sandwich together with jam or butter icing.
