Ingredients
- 3 eggs
- 3 ozs caster sugar
- 3 ozs self raising flour, sieved
- ¼ teasp. salt
- flavouring, as required
Method
- Break the eggs into a mixing bowl and add the sugar, salt and flavouring. Whisk at high speed until the mixture is thick and creamy.
- Sieve the flour and baking powder and add gradually to the mixture at slow or medium speed until smoothly mixed.
- Turn into greased and floured 7" sponge sandwich tins. Bake 15 to 20 minutes at 400°F (Gas 6).
- When cooked, turn out to cool on wire trays. When cold, sandwich together with jam or butter icing.
