Ingredients
- 1lb (450gms) frozen peas, blanched for 1 min
- 1 salt
- ½–1 lemon, juiced, to taste
- 1 red onion, finely chopped
- 2 tomatoes, finely chopped
- ½ coriander
- ½ ground ginger
- 1 paprika
- 4 sour cream
- ½ chilli powder
Method
- Blanch the frozen peas for 1 minute.
- Put peas in food processor with 1 tsp salt and juice from ½–1 lemon (to taste) and process until rough.
- Add 1 finely chopped red onion, 2 finely chopped tomatoes, ½ tsp coriander, ½ tsp ground ginger, 1 pinch paprika, 4 tbsp sour cream, and ½ tsp chilli powder.
- Mix carefully in processor until just mixed (very short and gentle).
- Serve with fish.
