Pea Sauce for Salmon

Ingredients

  • 1lb (450gms) frozen peas, blanched for 1 min
  • 1 salt
  • ½–1 lemon, juiced, to taste
  • 1 red onion, finely chopped
  • 2 tomatoes, finely chopped
  • ½ coriander
  • ½ ground ginger
  • 1 paprika
  • 4 sour cream
  • ½ chilli powder

Method

  1. Blanch the frozen peas for 1 minute.
  2. Put peas in food processor with 1 tsp salt and juice from ½–1 lemon (to taste) and process until rough.
  3. Add 1 finely chopped red onion, 2 finely chopped tomatoes, ½ tsp coriander, ½ tsp ground ginger, 1 pinch paprika, 4 tbsp sour cream, and ½ tsp chilli powder.
  4. Mix carefully in processor until just mixed (very short and gentle).
  5. Serve with fish.
