Boxing Day Pie

Ingredients

  • 13oz (370g) Jus-rol Shortcrust Pastry, thawed
  • 13oz (370g) cooked Christmas meats (chicken, ham, turkey, etc), sliced
  • 1 tbsp parsley, chopped
  • 1 tbsp chicken stock
  •   salt and pepper
  •   egg, beaten, to glaze

Method

  1. Pre-heat oven to 400°F (200°C) gas mark 6.
  2. Roll out three quarters of the pastry and use to line a seven inch sandwich tin.
  3. Add the sliced meat and chopped parsley in layers, seasoning well with salt and black pepper.
  4. Moisten with the chicken stock, and cover with the remaining pastry, rolled out fairly thinly.
  5. Use the pastry trimmings to decorate the top of the pie, and glaze with beaten egg.
  6. Bake at 400°F (200°C) gas mark 6 for 30-35 minutes until golden brown.
  7. Cool for 10 minutes before removing from tin.
