Peach Brûlée

Serves 4

Ingredients

  • 6 fairly ripe large peaches
  • 50ml orange juice
  • 150g Greek strained yogurt, drained
  • 75g low fat natural yogurt
  • 40-50g light muscovado sugar

Method

  1. Remove the skin from the peaches. If they are ripe, you can simply pull off the skin. Alternatively, they can be skinned like tomatoes by cutting a cross in the bottom of each peach and placing them in a large bowl of just boiled water. Leave for 4-5 minutes. Remove from the bowl and then pull off the skins.
  2. Halve the peaches, slice and lay in a deep ovenproof dish. Pour over the orange juice. Mix together the yogurts and pour over the peaches.
  3. Sprinkle with the sugar. Grill until the sugar has melted and just started to bubble. Leave to cool, then chill before serving.

Notes

For a special occasion, pour three tablespoons of brandy over the peaches before covering with the yogurt.
