Ingredients
- 2 lb salmon, flattened into fillets
- mousseline
- butter
Method
- Flatten fillets between sheets of cling film. Spread out.
- Cover with mousseline.
- Cover with a second flattened fillet.
- Put butter on top. Wrap in foil and slice into 4 pieces.
- Cook 7 minutes on each side.
