Ingredients
- 600ml (1 pint) apple and mango juice
- zest of 1 lemon, zested
- 75g (3oz) golden caster sugar
Method
- Put 600ml (1 pint) apple and mango juice into a pan with the zest of 1 lemon and 75g (3oz) golden caster sugar. Heat until the sugar dissolves.
- Bring to the boil, simmer for 1 minute, then pour into a bowl and cool.
- Strain into a freezerproof container. Cover and freeze for about 4 hours.
- Tip into a bowl and whisk to break up the ice crystals. Return to the container and freeze until firm.
- Serve in glasses.
