Apple and Mango Ice

Serves 4

Ingredients

  • 600ml (1 pint) apple and mango juice
  • zest of 1 lemon, zested
  • 75g (3oz) golden caster sugar

Method

  1. Put 600ml (1 pint) apple and mango juice into a pan with the zest of 1 lemon and 75g (3oz) golden caster sugar. Heat until the sugar dissolves.
  2. Bring to the boil, simmer for 1 minute, then pour into a bowl and cool.
  3. Strain into a freezerproof container. Cover and freeze for about 4 hours.
  4. Tip into a bowl and whisk to break up the ice crystals. Return to the container and freeze until firm.
  5. Serve in glasses.

Make ahead. Freeze for about 4 hours after initial cooling, then whisk to break up ice crystals before returning to freezer until firm.
