Green Beans and Flaked Almonds

Ingredients

  • 200g (7oz) green beans
  • 1tsp olive oil
  • 25g (1oz) flaked almonds
  • a little lemon juice
  •   salt and pepper

Method

  1. Bring a large pan of water to the boil. Add the green beans and cook for 4-5 minutes. Drain well.
  2. Meanwhile, heat the olive oil in a large frying pan, add the flaked almonds and cook for 1-2 minutes until golden.
  3. Turn off the heat, add the drained beans to the frying pan, toss in the oil and almonds and season well to taste.
  4. Squeeze over a little lemon juice just before serving.
