Chateau Potatoes

Ingredients

  • 450g / 1lb baby new potatoes, scrubbed
  •   butter
  •   seasoning
  • 1 tbsp fresh parsley, chopped, to garnish

Method

  1. Preheat the oven to 180C/350F/Gas 4. Cook the potatoes in boiling water for 5 minutes, then drain well.
  2. Melt the butter in a shallow flameproof casserole dish and fry the potatoes gently until evenly golden; season.
  3. Cover the casserole, then cook in the oven for 20-25 minutes until tender. Garnish with the parsley.
