Ingredients
- 450g / 1lb baby new potatoes, scrubbed
- butter
- seasoning
- 1 tbsp fresh parsley, chopped, to garnish
Method
- Preheat the oven to 180C/350F/Gas 4. Cook the potatoes in boiling water for 5 minutes, then drain well.
- Melt the butter in a shallow flameproof casserole dish and fry the potatoes gently until evenly golden; season.
- Cover the casserole, then cook in the oven for 20-25 minutes until tender. Garnish with the parsley.
