Ingredients
- ½ oz butter
- 1½ lb potatoes, scrubbed
- salt and freshly-ground pepper
- 1 lb tomatoes, sliced
- 8 oz onions, peeled and sliced
- 2 tablespoonfuls fresh sage or other fresh herb of choice, chopped
- 1 x 10 oz pack Pork Farms Honeydew Prime Back Bacon
- ¾ lb dessert apples, cored and sliced
Method
- Lightly butter an oval dish or rectangular casserole or piedish.
Notes
Traditional vegetables with the added bonus of lean back bacon, apples and herbs give this healthy casserole a special appeal. Serve it with buttered green beans, courgettes or brussels sprouts for a balanced supper.
