Derby Bacon and Apple Bake

Serves 4

Ingredients

  • ½ oz butter
  • 1½ lb potatoes, scrubbed
  •   salt and freshly-ground pepper
  • 1 lb tomatoes, sliced
  • 8 oz onions, peeled and sliced
  • 2 tablespoonfuls fresh sage or other fresh herb of choice, chopped
  • 1 x 10 oz pack Pork Farms Honeydew Prime Back Bacon
  • ¾ lb dessert apples, cored and sliced

Method

  1. Lightly butter an oval dish or rectangular casserole or piedish.

Notes

Traditional vegetables with the added bonus of lean back bacon, apples and herbs give this healthy casserole a special appeal. Serve it with buttered green beans, courgettes or brussels sprouts for a balanced supper.
