Ingredients
- 4 egg yolks
- 50g/2oz caster sugar
- 250ml/8fl oz milk
- 50ml/2fl oz single cream
- 1 vanilla pod
Method
- Place the egg yolks and sugar in a bowl and whisk until pale and fluffy.
- Place the milk, cream and vanilla pod in a pan and bring slowly to the boil.
- Pour the milk on to the eggs and strain back into the pan.
- Cook over a low heat, stirring gently, until the custard coats the back of a spoon; do not allow to boil.
