Vanilla Sauce

Serves 4

Ingredients

  • 4 egg yolks
  • 50g/2oz caster sugar
  • 250ml/8fl oz milk
  • 50ml/2fl oz single cream
  • 1 vanilla pod

Method

  1. Place the egg yolks and sugar in a bowl and whisk until pale and fluffy.
  2. Place the milk, cream and vanilla pod in a pan and bring slowly to the boil.
  3. Pour the milk on to the eggs and strain back into the pan.
  4. Cook over a low heat, stirring gently, until the custard coats the back of a spoon; do not allow to boil.
