Welsh Rarebit

Serves 1

Ingredients

  • 50g (2oz) Cheddar cheese, grated
  • A tablespoon beer, cider or milk
  •   salt and pepper
  • a little mustard
  • 1 slice white, brown or wholemeal bread
  •   butter
  •   chutney, grilled bacon or slices of tomato

Method

  1. Put grated cheese and beer into a small pan and heat gently to melt cheese.
  2. Season with salt, pepper and mustard.
  3. Toast then butter the bread, and spoon the melted cheese over it.
  4. Grill until lightly browned and bubbling.
  5. Serve at once, either with chutney or grilled bacon, or topped with sliced tomato.
