Ingredients
- 3 medium potatoes, quartered
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 1 quantity Herby Sauce
- 4 oz. self-raising flour
- pinch salt
- 1½ oz. margarine
- 3-4 tablespoons cold water
- 1 lb. packet frozen broad beans
Method
- Add prepared vegetables to the Herby Sauce mixture in a saucepan, bring to the boil, cover and simmer for 20 minutes.
- Meanwhile, make dumplings using the flour, salt, margarine and cold water to form a soft but not sticky dough. Shape into eight small balls.
- Add the frozen broad beans to the saucepan and place the dumpling balls on top of the mixture.
- Cover and simmer for a further 15 minutes, until the dumplings are fluffy, well risen and cooked through.
