Beef and Dumplings in a Pot

Ingredients

  • 3 medium potatoes, quartered
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 1 quantity Herby Sauce
  • 4 oz. self-raising flour
  • pinch salt
  • 1½ oz. margarine
  • 3-4 tablespoons cold water
  • 1 lb. packet frozen broad beans

Method

  1. Add prepared vegetables to the Herby Sauce mixture in a saucepan, bring to the boil, cover and simmer for 20 minutes.
  2. Meanwhile, make dumplings using the flour, salt, margarine and cold water to form a soft but not sticky dough. Shape into eight small balls.
  3. Add the frozen broad beans to the saucepan and place the dumpling balls on top of the mixture.
  4. Cover and simmer for a further 15 minutes, until the dumplings are fluffy, well risen and cooked through.
