Ingredients
- 2½ ozs margarine
- 4 ozs SR flour
- 2½ ozs caster sugar
- 1 lemon, grated rind
- 1 sm egg, small
- 12 ozs icing sugar
- orange, juice only
Method
- Rub 2½ ozs margarine into 4 ozs SR flour.
- Add 2½ ozs caster sugar and grated rind of 1 lemon. Mix to stiff dough with 1 small egg.
- Roll out ¼ inch thick. Cut into 1½ inch rounds.
- Bake on greased tray 10-15 mins, middle shelf, 375°F / Gas 5.
- Mix 12 ozs icing sugar with juice from the orange to form a stiff mixture. Coat cooled biscuits.
Notes
Will keep for 3-4 days in sealed tin.
