Orange Biscuits

Serves makes about 30 Cook 15 min

Ingredients

  • 2½ ozs margarine
  • 4 ozs SR flour
  • 2½ ozs caster sugar
  • 1 lemon, grated rind
  • 1 sm egg, small
  • 12 ozs icing sugar
  •   orange, juice only

Method

  1. Rub 2½ ozs margarine into 4 ozs SR flour.
  2. Add 2½ ozs caster sugar and grated rind of 1 lemon. Mix to stiff dough with 1 small egg.
  3. Roll out ¼ inch thick. Cut into 1½ inch rounds.
  4. Bake on greased tray 10-15 mins, middle shelf, 375°F / Gas 5.
  5. Mix 12 ozs icing sugar with juice from the orange to form a stiff mixture. Coat cooled biscuits.

Notes

Will keep for 3-4 days in sealed tin.
