Penne with Potato, Runner Beans & Walnut Cheese Gratin

Ingredients

  •   penne pasta
  •   potato, sliced
  •   runner beans, whole
  •   onion, finely chopped
  •   walnuts, chopped
  •   tarragon or parsley
  •   cheese, grated
  •   salt and pepper

Method

  1. Cook penne in a large pan of rolling boiling salted water.
  2. Add the sliced potato, whole runner beans, finely chopped onion, chopped walnuts, and tarragon or parsley to the boiling water with the pasta.
  3. Cook for 15–20 minutes, then drain.
  4. Cover with grated cheese and place under a hot grill to brown for approximately 10 minutes.

Notes

Cook penne in rolling boiling salted water with the vegetables. Finish under a hot grill to brown the cheese topping.
