Ingredients
- 227g can chopped tomatoes
- 3 shallots, finely chopped
- 2 tbsp tomato purée
- 50ml/2fl oz olive oil
- 50ml/2fl oz dry white wine
- 50ml/2fl oz white wine vinegar
- 200g/7oz button mushrooms
- 2 sprigs each fresh thyme, fresh rosemary and fresh basil
Method
- Place the tomatoes, shallots, tomato purée, oil, wine and vinegar in a pan, bring to the boil, then simmer for 15-20 minutes.
- Stir in the mushrooms and cook for 5 minutes. Remove from the heat, add the herbs, then cover and marinade for several hours.

Marinade for several hours after cooking.
