Mushrooms with Tomato and Fresh Herbs

Serves 4 as a side salad Cook 25 min

Ingredients

  • 227g can chopped tomatoes
  • 3 shallots, finely chopped
  • 2 tbsp tomato purée
  • 50ml/2fl oz olive oil
  • 50ml/2fl oz dry white wine
  • 50ml/2fl oz white wine vinegar
  • 200g/7oz button mushrooms
  • 2 sprigs each fresh thyme, fresh rosemary and fresh basil

Method

  1. Place the tomatoes, shallots, tomato purée, oil, wine and vinegar in a pan, bring to the boil, then simmer for 15-20 minutes.
  2. Stir in the mushrooms and cook for 5 minutes. Remove from the heat, add the herbs, then cover and marinade for several hours.

Marinade for several hours after cooking.
