Coconut Crunchies

Ingredients

  • 7 oz. plain flour, sieved
  • 2 level teaspoons bicarbonate of soda
  • pinch salt
  • 4 oz. butter or margarine
  • 4 oz. soft brown sugar
  • 4 oz. rolled oats
  • 1 large egg, beaten
  • 1 teaspoon vanilla essence
  •   milk, if necessary to mix
  • 2 oz. desiccated coconut
  •   lemon curd or red jam

Method

  1. Sieve the flour, bicarbonate of soda and salt into a mixing bowl.
  2. Rub in the butter or margarine finely.
  3. Add the soft brown sugar and rolled oats and mix together until well blended.
  4. Mix to a stiff dough with the beaten egg and vanilla essence.
  5. Form into small balls about the size of a walnut, then roll each in desiccated coconut.
  6. Place on a greased baking sheet. Make a slight hollow in the centre of each ball and fill with lemon curd or jam.
  7. Bake on shelf above centre in a moderate oven (375°F / Gas Mark 4) for 15 minutes or until golden brown.
