Salmon Mousse

Ingredients

  • 1 large salmon, flaked
  • 1 cup thick cream
  • 2 tblps cream cheese
  • 1 pkt gelatine, dissolved as per instructions
  •   salt and pepper
  •   dill, a little
  • 2 tsps spring onions, finely chopped
  • 1 stalk celery, finely chopped
  • 1 tsp lemon juice

Method

  1. Flake 1 large tin salmon and mix with 1 cup of thick cream and 2 tablespoons cream cheese.
  2. Dissolve 1 packet of gelatine as per instructions and mix in quickly with salt and pepper and a little dill.
  3. Add finely chopped spring onions (2 tsps) and finely chopped celery (1 stalk). Mix very well.
  4. Add lemon juice (1 tsp).
  5. Spoon into fish moulds (small) or 1 large. Make sure there are no air bubbles by pressing down very well after sticking a fork in.
  6. Put in fridge for at least 2-4 hours.
