Jacket Potatoes

Ingredients

  • 8 large old potatoes, scrubbed and dried
  • 4 oz. Cheddar cheese, coarsely grated
  •   salt and pepper
  • 4 oz. butter

Method

  1. Turn on oven; set at moderately hot, 400°F (Mark 6).
  2. Scrub potatoes well; dry thoroughly in a clean cloth. Prick with a fork. Put on a baking sheet.
  3. Cook in centre of preheated oven for 1 hour, or until soft.
  4. Meanwhile, grate cheese coarsely.
  5. When potatoes are cooked, make a deep cut across each; season well with salt and pepper.
  6. Put ½ oz. butter in each potato. Divide cheese between potatoes and sprinkle it over the butter. Serve really hot.
