Chicken in Sherry

Ingredients

  • 2 chicken breasts
  • ½ onion, finely diced
  • 1 tablespoon sherry
  •   button mushrooms, sliced
  • 3 tablespoons double cream
  • ½ tin condensed soup

Method

  1. Fry 2 chicken breasts to seal.
  2. Add ½ finely diced onion and cook for 8 minutes.
  3. Pour 1 tablespoon of sherry over.
  4. Then add sliced button mushrooms.
  5. Pour 3 tablespoons of double cream over, or alternatively use ½ tin of condensed soup.
  6. Put in an ovenproof dish and cook in a gas oven at Gas Mark 3 for 45–50 minutes.

Notes

Double cream or ½ tin condensed soup can be used as an alternative.
