Sesame Trout

Serves 4 Prep 5 min Cook 18 min

Ingredients

  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 lime, juice of
  • 4 x 150g trout fillets
  • 2 tbsp sesame seeds
  •   lime, cut into wedges, to serve
  •   herb salad, to serve
  •   fennel, finely sliced, to serve

Method

  1. Preheat the grill.
  2. Put 1 tbsp sesame oil in a bowl. Add 1 tbsp soy sauce and the juice of 1 lime and whisk together.
  3. Put 4 x 150g (5oz) trout fillets on a baking sheet, pour over the sesame mixture and grill for 8–10 minutes.
  4. Sprinkle with 2 tbsp sesame seeds and grill again for 2–8 minutes until the seeds are golden.
  5. Serve with a wedge of lime, a herb salad and some finely sliced fennel.
