Ingredients
- 1 British chicken
- 4oz breadcrumbs
- 2 spring onions, chopped
- 2 tbspn parsley, chopped
- 2 large mushrooms, chopped
- seasoning, to taste
- 1 lemon, grated rind and juice
- melted butter
Method
- Allow chicken to thaw completely if frozen.
- Pre-heat oven at 375°F/Gas Mark 5.
- Mix the stuffing ingredients together and fill the breast cavity of the chicken.
- Brush the bird with melted butter and place in the oven and cook for approximately 1½ hours.
- Serve with broccoli and potato croquettes.
