Bacon and Tomato Flan

Serves 4 Cook 35 min

Ingredients

  •   bacon rashers, finely chopped
  •   eggs
  •   milk
  •   tomatoes
  •   seasoning

Method

  1. Beat eggs with seasoning. Add milk to make custard.
  2. Strain custard over bacon and tomatoes in pastry case.
  3. Bake for a good 10 minutes in a hot oven at Mark 7, 425°F.
  4. Lower heat to moderate, Mark 4, 350°F, for a further 20–25 minutes until filling is firm and set.

Notes

By making pastry with little less fat than usual, it is less fragile and will carry more easily. Can serve with a cheese sauce if liked. Bake extra tomatoes and serve with buttered mixed vegetables of choice.
