Shortbread Biscuits

Ingredients

  • 6oz (150g) plain flour, sieved
  • half a teaspoon baking powder
  • 4oz (100g) butter
  • 2oz (50g) castor sugar
  • 1 egg yolk, beaten

Method

  1. Preheat oven to 180C/350F/Gas 4.
  2. Sieve together 6oz (150g) plain flour and half a teaspoon of baking powder.
  3. Rub 4oz (100g) butter into the flour mixture and add 2oz (50g) of castor sugar.
  4. Add the beaten yolk of one egg and knead into a stiff dough.
  5. On a lightly floured board, roll the dough out thinly.
  6. Cut into biscuits with a cookie cutter and bake in the oven for 20-30 minutes.

Notes

Serve warm with hot chocolate. Bake for 20-30 minutes.
