Italian-Style Potatoes

Ingredients

  • 450g/1lb new potatoes, scrubbed
  • 30ml oil
  • 100g/4oz mushrooms, sliced
  • 4 tomatoes, skinned, seeded and cut into wedges
  • 100g/4oz Cheshire cheese, diced
  • ¼ bunch basil leaves
  •   salt
  •   freshly ground black pepper

Method

  1. Place the potatoes in a pan of salted water. Bring to the boil, cover and simmer for 10 minutes. Drain and pat dry on kitchen paper.
  2. Heat the oil in a pan and fry the mushrooms, stirring occasionally.
  3. Add the tomatoes, cheese and basil leaves and cook for 2 minutes and serve over the potatoes immediately.
