Ingredients
- 450g/1lb new potatoes, scrubbed
- 30ml oil
- 100g/4oz mushrooms, sliced
- 4 tomatoes, skinned, seeded and cut into wedges
- 100g/4oz Cheshire cheese, diced
- ¼ bunch basil leaves
- salt
- freshly ground black pepper
Method
- Place the potatoes in a pan of salted water. Bring to the boil, cover and simmer for 10 minutes. Drain and pat dry on kitchen paper.
- Heat the oil in a pan and fry the mushrooms, stirring occasionally.
- Add the tomatoes, cheese and basil leaves and cook for 2 minutes and serve over the potatoes immediately.
