Ingredients
- 40g black pudding, finely chopped, fried lightly
- leek, sliced
- butter
- salt and pepper
- 2 tablespoons parsley, chopped
- 50g medium oatmeal
Method
- Sweat sliced leek in butter for 2-3 mins.
- Add the finely chopped black pudding (fried lightly) to the leeks and fry together with salt and pepper, 2 tablespoons chopped parsley, and 50g medium oatmeal.
- Then stuff the bird. Alternatively, small balls can be made and put in a moderate oven for 20-30 mins.
