Stuffing for Poultry

Ingredients

  • 40g black pudding, finely chopped, fried lightly
  •   leek, sliced
  •   butter
  •   salt and pepper
  • 2 tablespoons parsley, chopped
  • 50g medium oatmeal

Method

  1. Sweat sliced leek in butter for 2-3 mins.
  2. Add the finely chopped black pudding (fried lightly) to the leeks and fry together with salt and pepper, 2 tablespoons chopped parsley, and 50g medium oatmeal.
  3. Then stuff the bird. Alternatively, small balls can be made and put in a moderate oven for 20-30 mins.
