Ingredients
- onions, fried till translucent
- dash white wine
- chopped white fish or scallops, chopped
- double cream
- tarragon
- mozzarella or parmesan
Method
- Fry onions until translucent. Add a dash of white wine, then add chopped white fish or scallops (6).
- Cook double cream with tarragon for 1 minute, then pour over the cooking fish.
- Sprinkle with mozzarella or parmesan. Put under the grill while hot for 1–2 minutes.
- Serve with potatoes and broccoli or spinach.
