Fish Pie

Ingredients

  •   onions, fried till translucent
  • dash white wine
  •   chopped white fish or scallops, chopped
  •   double cream
  •   tarragon
  •   mozzarella or parmesan

Method

  1. Fry onions until translucent. Add a dash of white wine, then add chopped white fish or scallops (6).
  2. Cook double cream with tarragon for 1 minute, then pour over the cooking fish.
  3. Sprinkle with mozzarella or parmesan. Put under the grill while hot for 1–2 minutes.
  4. Serve with potatoes and broccoli or spinach.
