Roast Potatoes - Red Desirée

Ingredients

  •   Red Desirée potatoes, whole
  •   goose fat, duck fat, or beef fat

Method

  1. Put oven tray in oven with goose or duck fat, or beef fat to get hot (in 10 mins).
  2. Boil (whole) potatoes for 10 mins. Drain - put lid on and give a good shake.
  3. Take hot tray out of oven and place over direct heat (low). Put potatoes on hot tray and spoon the hot fat over.
  4. Place in oven - top shelf for 40 mins.
