Ingredients
- chicken pieces
- hot fat
- 2-3 shallots, sliced finely
- parsley
- tarragon
- chives
- thyme
- salt and pepper
Method
- Fry chicken pieces in hot fat 5–7 mins on each side until nice brown.
- Cover and cook. Slice 2–3 shallots finely and add to pan for 7–8 mins.
- Add parsley, tarragon, chives and thyme, and salt and pepper to taste.
- Cook in pan (covered) for another 15 mins.

Can use chicken legs + fillets + breasts
