Ingredients
- 6 oz. digestive biscuits, crushed
- 3 oz. plain chocolate
- 2 oz. butter
- 4 oz. white marshmallows
- ¼ pint milk
- 2 limes, rind grated and juiced
- ⅓ pint double cream
- a little grated chocolate
Method
- Crush the biscuits. Melt chocolate and butter in a large bowl over a saucepan of hot water. Stir in biscuit crumbs. Press into an 8 in. fluted flan dish. Chill.
- Place marshmallows and milk in a bowl over a saucepan of hot water, stirring occasionally, until melted. Remove from heat and cool. Stir in grated rind and juice from limes.
- Whisk cream until thick and just holding its shape. Fold into marshmallow mixture, pour into flan case, chill in refrigerator until set.
- Decorate with grated chocolate.
