Chocolate and Lime Flan

Ingredients

  • 6 oz. digestive biscuits, crushed
  • 3 oz. plain chocolate
  • 2 oz. butter
  • 4 oz. white marshmallows
  • ¼ pint milk
  • 2 limes, rind grated and juiced
  • ⅓ pint double cream
  • a little grated chocolate

Method

  1. Crush the biscuits. Melt chocolate and butter in a large bowl over a saucepan of hot water. Stir in biscuit crumbs. Press into an 8 in. fluted flan dish. Chill.
  2. Place marshmallows and milk in a bowl over a saucepan of hot water, stirring occasionally, until melted. Remove from heat and cool. Stir in grated rind and juice from limes.
  3. Whisk cream until thick and just holding its shape. Fold into marshmallow mixture, pour into flan case, chill in refrigerator until set.
  4. Decorate with grated chocolate.
