Macaroni Savoury

Serves 4

Ingredients

  • 8oz quick macaroni
  • 1 large onion, peeled and finely chopped
  • 4oz mushrooms, washed and sliced
  • 1 level teaspoon yeast extract
  • ½ pint hot water
  • 2oz margarine
  • 2 level tablespoons plain flour
  • 1 small (8oz) can peeled tomatoes
  • 6oz cheese, grated

Method

  1. Cook macaroni as directed on packet. Peel and chop onion finely. Wash and slice mushrooms. Stir yeast extract into hot water until dissolved.
  2. Melt margarine in a large saucepan, and fry onion and mushrooms until tender. Add flour and cook for 1 minute. Gradually stir in yeast extract and water. Add contents of can of tomatoes, bring to boil and cook for 1 minute, stirring continuously. Remove from heat and stir in drained macaroni.
  3. Pour mixture into an ovenproof dish which will fit under the grill. Cover with cheese and grill until cheese browns.
