Sultana Fudge

Serves Makes 2lb Cook 30 min From Carnation Evaporated Milk

Ingredients

  • 3oz butter
  • 1½lb granulated sugar
  • 1 large can Carnation Evaporated Milk
  • few drops vanilla essence
  • 2oz sultanas

Method

  1. Lightly grease a 7" square tin.
  2. Melt butter in a large heavy based saucepan. Add sugar and Carnation Evaporated Milk.
  3. Heat gently, stirring until the sugar has dissolved.
  4. Boil mixture steadily, stirring for 20-30 minutes until it reaches 248°F or until a little of the mixture when dropped into cold water forms a soft ball.
  5. Remove from the heat and add vanilla essence and sultanas.
  6. Beat with a wooden spoon until it thickens, then pour into the prepared tin. Mark into squares.
  7. When fudge is set, turn out and cut into squares.
