Ingredients
- pasta
- cheddar cheese, grated
- butter
- same weight as butter flour
- hot milk
- salt and pepper
- mushrooms, lightly fried
- leeks or onions, lightly sweated
- Parmesan cheese, grated, for topping
Method
- Cook pasta. While pasta cooks, make a sauce: melt butter, stir in the same weight of flour, then add hot milk to make a white sauce.
- Remove sauce from heat and add grated cheddar. Season with salt and pepper. Do not overheat the cheese or it will go stringy.
- Drain pasta carefully. Add lightly fried mushrooms and lightly sweated leeks or onions.
- Add the cheese sauce to the macaroni and mix together.
- Place in an oven dish and spread Parmesan cheese over the top. Brown in a moderate oven for 20–30 minutes.
- Serve with salad or fried tomatoes.
Notes
Do not overheat cheese — goes stringy. Add cheese off heat. Serve with salad or fried tomatoes.
