Macaroni Cheese

Ingredients

  •   pasta
  •   cheddar cheese, grated
  •   butter
  • same weight as butter flour
  •   hot milk
  •   salt and pepper
  •   mushrooms, lightly fried
  •   leeks or onions, lightly sweated
  •   Parmesan cheese, grated, for topping

Method

  1. Cook pasta. While pasta cooks, make a sauce: melt butter, stir in the same weight of flour, then add hot milk to make a white sauce.
  2. Remove sauce from heat and add grated cheddar. Season with salt and pepper. Do not overheat the cheese or it will go stringy.
  3. Drain pasta carefully. Add lightly fried mushrooms and lightly sweated leeks or onions.
  4. Add the cheese sauce to the macaroni and mix together.
  5. Place in an oven dish and spread Parmesan cheese over the top. Brown in a moderate oven for 20–30 minutes.
  6. Serve with salad or fried tomatoes.

Notes

Do not overheat cheese — goes stringy. Add cheese off heat. Serve with salad or fried tomatoes.
