Method
- Place the raspberries in a saucepan with the sugar.
- Heat gently until the sugar has completely dissolved, then remove from the heat.
- Mash the fruit with a fork and then strain the mixture through a fine sieve lined with a piece of scalded muslin.
- Pour into a clean bottle and seal.
- Store in the fridge and use up within one week of making.
Notes
Total cals 2,000. Store in the fridge and use up within one week of making. To dilute, use 1 part cordial to 5 parts iced water. Serve in frosted glasses.
