Sauces: Freezing Tips

For those which take time to prepare, freeze three or four times what you need for a dish in separate containers. Bread sauce improves with freezing, while the best-suited fruit sauces are apple, cranberry, orange, strawberry, raspberry and black cherry. Whisked sauces such as Hollandaise, Mousseline and Bearnaise freeze well. Whisk briskly after defrosting.
