Ingredients
- 1 lb potatoes, peeled and finely sliced
- butter
- salt and pepper
- grated nutmeg
- 2 tablespoons cream
- 7 fluid oz creamy milk
- 1 egg, beaten
- 1 tablespoon dried white breadcrumbs
Method
- Butter a shallow pie-dish. Layer the potatoes in it, sprinkling with salt, pepper and nutmeg as you go.
- Mix the cream and milk with the beaten egg and season with salt and pepper.
- Pour this over the potatoes and sprinkle with the breadcrumbs.
- Put a few blobs of butter on the top and bake in a moderate oven (180°C / 350°F / gas mark 4) until the top is brown and crisp and the potatoes are soft right through.
Notes
These are the most luxurious of casseroled potatoes. They are often cooked with the addition of a small clove of crushed garlic, which is nice if they are to be served with roast lamb.
