Sausage Casserole

Ingredients

  • 1 orange pepper, seeded and sliced
  • 1 green pepper, seeded and sliced
  • 2 leeks, sliced
  • 1 tbsp sunflower oil
  • 1 large onion, sliced
  • 2 garlic, crushed
  • 450g/1lb Tesco Old English Pork Sausages
  • 400g/14oz chopped tomatoes, canned
  • 1 tbsp tomato purée
  • 150ml/¼ pint sweet cider
  • 2 tbsp cornflour
  • 175g/6oz open mushrooms, sliced
  • 2 tbsp fresh sage, chopped

Method

  1. Preheat the oven to 190C/375F/Gas 5. Heat the oil in a flameproof casserole dish. Fry the onion and garlic for 5-10 minutes. Remove from the pan and drain on kitchen paper.
  2. Add the sausages to the pan and cook for 10 minutes until golden brown. Remove and stir in the peppers and leeks, cook for 3 minutes. Return the onions and sausages to the pan.
  3. Stir in the tomatoes with their juice, tomato purée and cider. Cover and bake for 30 minutes.
  4. Mix the cornflour with 6 tbsp juice from the casserole 10 minutes before the end of cooking. Stir into the casserole with the mushrooms and sage. Serve with buttered noodles.
