Ingredients
- 1 orange pepper, seeded and sliced
- 1 green pepper, seeded and sliced
- 2 leeks, sliced
- 1 tbsp sunflower oil
- 1 large onion, sliced
- 2 garlic, crushed
- 450g/1lb Tesco Old English Pork Sausages
- 400g/14oz chopped tomatoes, canned
- 1 tbsp tomato purée
- 150ml/¼ pint sweet cider
- 2 tbsp cornflour
- 175g/6oz open mushrooms, sliced
- 2 tbsp fresh sage, chopped
Method
- Preheat the oven to 190C/375F/Gas 5. Heat the oil in a flameproof casserole dish. Fry the onion and garlic for 5-10 minutes. Remove from the pan and drain on kitchen paper.
- Add the sausages to the pan and cook for 10 minutes until golden brown. Remove and stir in the peppers and leeks, cook for 3 minutes. Return the onions and sausages to the pan.
- Stir in the tomatoes with their juice, tomato purée and cider. Cover and bake for 30 minutes.
- Mix the cornflour with 6 tbsp juice from the casserole 10 minutes before the end of cooking. Stir into the casserole with the mushrooms and sage. Serve with buttered noodles.
