Mulled Wine

Serves about 10 glasses

Ingredients

  • 1 small apple, quartered
  • 8 cloves
  • 1 lemon, rind pared; plus slices to serve
  • 3 cinnamon sticks
  • 225g/8oz light muscovado sugar
  • 1.75 litres/3 pints red wine
  • 150ml/¼ pint brandy

Method

  1. Quarter one small apple and stud with eight cloves.
  2. Place in a pan with the pared rind of one lemon, three cinnamon sticks, 225g/8oz light muscovado sugar and 1.75 litres/3 pints of red wine.
  3. Simmer for a few minutes.
  4. Remove from the heat and pour in 150ml/¼ pint brandy, if you like.
  5. Strain the mulled wine, add lemon slices and serve hot.

Notes

Brandy is optional.
