Sausage & Bean Casserole

Ingredients

  • 1 tbsp oil
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 1 x 400g (14oz) red kidney beans, drained
  • 1 x 400g (14oz) chopped tomatoes, drained, juice reserved
  • 2 tbsp white wine vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato purée
  • 2 tbsp Demerara sugar
  • 2 tsp mustard powder
  • 1 tsp mixed herbs
  • 280ml (½ pint) water
  • 3 tbsp Bisto Traditional Rich Gravy Granules
  •   sausages

Method

  1. Heat oil in a large frying pan or flameproof casserole dish.
  2. Add sausages and cook gently until brown, turning frequently. Remove from the pan and carefully drain off any excess oil leaving about 1 tbsp in the pan.
  3. Fry onion and green pepper in the remaining oil until soft.
  4. Stir in the kidney beans, chopped tomatoes, white wine vinegar, Worcestershire sauce, tomato purée, sugar, mustard powder and herbs.
