Ingredients
- duck, rolled in seasoned flour
- onion, sliced
- butter
- about 4" chicken stock
- red wine vinegar
- 1/2 + 1/2 sugar syrup, cooked till thickened
Method
- Roll duck in seasoned flour. Brown all over with sliced onion in butter (10-20 mins).
- Heat about 4" chicken stock in large pan. Add duck, onion and butter.
- Cook in medium oven with lid on pan 1½-2 hours (ie. pot roast).
- Add red wine vinegar to liquid left in pan. Make sugar syrup (½ + ½ till thickened). Add to pan. Simmer for 2-4 mins.
- Serve round carved duck.
