Roast Duck

Ingredients

  •   duck, rolled in seasoned flour
  •   onion, sliced
  •   butter
  • about 4" chicken stock
  •   red wine vinegar
  • 1/2 + 1/2 sugar syrup, cooked till thickened

Method

  1. Roll duck in seasoned flour. Brown all over with sliced onion in butter (10-20 mins).
  2. Heat about 4" chicken stock in large pan. Add duck, onion and butter.
  3. Cook in medium oven with lid on pan 1½-2 hours (ie. pot roast).
  4. Add red wine vinegar to liquid left in pan. Make sugar syrup (½ + ½ till thickened). Add to pan. Simmer for 2-4 mins.
  5. Serve round carved duck.
