Cajun Turkey Steaks

Ingredients

  • 450g/1lb small new potatoes
  • 200g/8oz runner beans, trimmed and thickly sliced
  • 2 tsp cajun seasoning, e.g. Schwartz
  • 4 turkey steak fillets
  • 3 tbsp olive oil
  • 1 lemon, finely grated zest and juice
  • 1 garlic, crushed
  • 3 firm tomatoes, seeded and cut into chunks

Method

  1. Boil the potatoes for 8 minutes. Add the runner beans, cover and cook for a further 4 minutes.
  2. Meanwhile, sprinkle the cajun seasoning on to both sides of each turkey steak. Heat 1 tablespoon of oil in a large shallow frying pan and fry turkey steaks for 3-4 minutes on each side until they start to blacken. Add lemon zest and juice, and bubble briefly to reduce slightly.
  3. Drain the potatoes and beans. Warm remaining oil in pan; stir in vegetables, garlic and tomatoes. Cook for 1-2 minutes, tossing until the vegetables are just coated. Serve with turkey and pan juices.
