Ingredients
- 450g/1lb small new potatoes
- 200g/8oz runner beans, trimmed and thickly sliced
- 2 tsp cajun seasoning, e.g. Schwartz
- 4 turkey steak fillets
- 3 tbsp olive oil
- 1 lemon, finely grated zest and juice
- 1 garlic, crushed
- 3 firm tomatoes, seeded and cut into chunks
Method
- Boil the potatoes for 8 minutes. Add the runner beans, cover and cook for a further 4 minutes.
- Meanwhile, sprinkle the cajun seasoning on to both sides of each turkey steak. Heat 1 tablespoon of oil in a large shallow frying pan and fry turkey steaks for 3-4 minutes on each side until they start to blacken. Add lemon zest and juice, and bubble briefly to reduce slightly.
- Drain the potatoes and beans. Warm remaining oil in pan; stir in vegetables, garlic and tomatoes. Cook for 1-2 minutes, tossing until the vegetables are just coated. Serve with turkey and pan juices.
