Ingredients
- 2 tbsp olive oil
- 2 small, or 1 large onion, thinly sliced
- 700g / 1lb 9oz chestnut mushrooms
- 2 garlic cloves, chopped
- 150ml / ¼ pint medium sherry
- salt and pepper
- fresh parsley, chopped, for sprinkling
Method
- In a pan, heat the oil, then cook the onion for 10 minutes until very soft. Add the mushrooms and garlic and cook, stirring, until the mushrooms start to soften.
- Add the sherry, season and bring to the boil. Cover and cook for 10 minutes until the mushrooms are tender. Serve sprinkled with parsley.
