Sherried Mushrooms

Serves 12 with other dishes Cook 20 min

Ingredients

  • 2 tbsp olive oil
  • 2 small, or 1 large onion, thinly sliced
  • 700g / 1lb 9oz chestnut mushrooms
  • 2 garlic cloves, chopped
  • 150ml / ¼ pint medium sherry
  •   salt and pepper
  •   fresh parsley, chopped, for sprinkling

Method

  1. In a pan, heat the oil, then cook the onion for 10 minutes until very soft. Add the mushrooms and garlic and cook, stirring, until the mushrooms start to soften.
  2. Add the sherry, season and bring to the boil. Cover and cook for 10 minutes until the mushrooms are tender. Serve sprinkled with parsley.
